The royal fishball

The company is based on crushing of “Carassio”, a typical species of fish from Lake Trasimeno (Perugia, Italy). The fish pulp combined with potatoes and parsley should form a dough creating mini-fishburgers with fun shapes inspired by cartoons. These mini-fishburgers are frozen and then transported through a refrigerated truck in various kindergartens and primary and secondary schools around Italy. The fish would first gutted with the help of a punch and a knife and then would be milled through a blender to remove the plugs.
The “Carassio” has excellent nutritional qualities and is not currently used for food purposes due to the presence of many plugs, and it has a low cost too.
